Hearty Tortellini Soup

This tortellini soup has a tomato base and is loaded with flavors from sausage, veggies, herbs and of course, tortellini.

Ingredients

Preparation

1. Brown sausage in 5 quart dutch oven (or large heavy soup pot) over medium heat. Remove sausage, but leave about one tablespoon drippings.
2. Cook onions and garlic in drippings until onions are tender.
3. Add sausage, broth, wine, tomatoes, tomato sauce, carrots, bell pepper, zucchini, basil and oregano. Bring to a boil, then reduce heat and simmer for 30 minutes.
4. Stir in tortellini, cover and simmer an additional 25 minutes (or until tortellini is tender).
5. Sprinkle each serving with Parmesan cheese.
