Jamaican Beef Patty Recipe

Ingredients

Preparation

DOUGH-Flaky pastry:

1. Mix Dry Ingredients.
2. Cut the butter and shortening into cubes and add to the floor. Return the remaining butter into the fridge
3. Mix butter and shortening into the floor WITH a fork. If you use your hands it will melt. Use the fork to break the butter into chucks.
4. Add the butter milk slowly and mix it in. Butter milk should be cold.
5. Dough should be sticky, now roll and get the excess.
6. Let dough rest in the fridge for minimum of 1 hour.

Meat - Filling
********************
1. Break the ground beef up in a bowl.
2. Season ground beef with the dry ingredients. Use 1/2 a Tsp of black Pepper.
3. Mix and then set aside
4. Dice the vegetables - green onions, white onions, and scotch bonnet pepper.
5. Heat pan to medium high.
6. Add Tbsp of oil and fry the white onions for about 1 minute. Until translucent.
7. Add fresh garlic to the mixture.
8. Season vegetables with dry thyme and 1/2 tsp of black pepper and 1/4 tsp of salt
9. Stir in green onions and pepper.
10. Add soya sauce, oyster sauce and tomato ketchup.
11. Add beef to the mixture. Ensure you break the beef to ensure even cooking.
12. Add the tomato paste. Replace with ketchup.
13. Cover on medium low and let cook for 10 minutes.
14. Add 1/4 cup of panko bread crumbs.
15. 1/4 cup of water
16. Turn stove off and let it cool down.
17. Using a mixture puree the meat mixture to create the correct consistence.

Patty Dough
********************
1. Sprinkle cutting board, dough and rolling pin with floor.
2. Roll out the dough evenly. Try to get 1 cm thinkness
3. Continue to sprinkle floor to avoid sticking.
4. Use a potato peeler to peel the remaining butter into the rolled out dough. The thin slices of butter will allow the dough to fold.
5. Spread shortening into the floor.
6. Fold dough over the butter and shortening. fold multiple times.
7. Floor dough and surface.
9. Roll the butter into the dough.
10. Fold and roll butter into the dough. Multiple times until we get all butter into dough.
11. Floor the flat surface and fold. Add to a bowl with floor on the surface so that the dough doesn't stick. Cover and let rest for 30 minutes.
12. Unfold dough. Cut into squares for the patties
13. Add meat to patty dough brush edges with the egg mixture.
14. Use fingers to close. Dip fork into floor and then use to crimp the edges.
15. Use pizza cutter to remove excess.
16. Egg wash the top side of the patty.
17. Cook in oven at 425F for 25 minutes.
18. EAT!
