Fajita Pasta
This one pot Fajita Pasta is not only easy to make, but super delicious as well! It's a great weeknight meal, as you can have it on the table in no time!
Ingredients
- 1 pound spinach fettuccine noodles
- 1 yellow bell pepper, sliced
- 1 red bell pepper sliced
- 1 green bell pepper, sliced
- 1 purple onion, sliced
- 2 garlic cloves, chopped
- 1 jalapeƱo, chopped
- 2 tablespoons unsalted butter
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 pound boneless skinless chicken breasts, chopped
- 1/4 cup fresh cilantro
- 2 cups chicken stock
- 1/3 cup heavy cream
- 1/4 cup parmesan cheese (optional)
Preparation
Step 1:
Add all of the ingredients (except for the heavy cream and parmesan. Cover, bring to a simmer and cook until the chicken has fully cooked through and the noodles have softened, about 25 minutes.
Step 2:
Stir in the cream and parmesan cheese and serve immediately.
